Taleggio dop
Is the organic version of the cheese that best represents the arrigoni family’s beginnings in the world of cheesemaking, and the name itself identifies its provenance and origins. awarded dop (pdo) status in 1996, taleggio is a world-famous cheese produced throughout Lombardy. Its real origins, however, can be traced back to Valtaleggio, where farmers have been producing and aging this cheese for centuries according to the same principles that we have conserved to this day. In fact we have followed all the traditional methods and recreated the conditions that make this cheese so unique: pinewood boxes, underground stone cellars, artisanal workmanship and renowned experience and expertise.
