This is the classic Taleggio obtained from pasteurized cow's milk. The paste is compact and uniform, white or straw yellow in color. The rind is very thin and pinkish in color. The flavor is sweet, buttery and aromatic, with a trace of acidity. The maturing is longer than the usual 35 days prescribed by the consortium, and contributes, as the days pass, to increasing the butteriness of the paste and intensifying the flavor, with truffle aftertastes. At the end of the maturing, a careful selection determines which forms, the best, can be sold with this packaging, with which we indicate our top of the range.
