Geographically speaking, fresh cheeses are more commonly associated with southern Italy, the traditional home of mozzarella, burrata and other fresh cheeses of the highest quality. And yet our area has its own small tradition of high quality fresh cheeses. These cheeses were developed in particular by generations of cheese makers down in the lowlands who did not face the transportation challenges found up in the mountains.
