This blue cheese looks similar to sharp gorgonzola but with a lighter colored rind; the paste is bright white with rich green veining. On the palate it is extremely creamy and melts in the mouth, leaving a sensation of freshness and rich aromas. Not overwhelmingly sharp, the flavor is milky and sweet.
