This is a typical local cheese, a foundational element of the Lombard-area cheese making tradition. It is doubtlessly one of the world’s most famous cheeses. Extraordinarily soft and creamy, our Gorgonzola is still produced in a small-scale facility where it is the human touch that makes the difference. It has a mild flavor that melts in the mouth, with clearly visible but not overwhelming veining that also appears in a more delicate form inside the paste. This cheese is aged on average for at least 60 days, the last part of which is carried out in Valtaleggio itself.
