Product features

Alpeggio is a fine blue cheese made using raw milk from the Taleggio Valley.

We wanted to create a cheese connecting two worlds: mountain and plain.

Alpeggio is an evocation of the famous Gorgonzola PDO, a typical blue cheese of the plain, and it also recalls the ancient mountain traditions we are very devoted to: both raw milk and our summer practice of moving to the mountain pastures (transhumance).
It is made with the excellent mountain milk from the Taleggio Valley exclusively, which is mostly produced by Italian Brown cows of our local breeders who reach high mountain pastures every Summer.
It is produced in small batches of 30 wheels in the local Coop Sant’Antonio in the Taleggio Valley and then it ages for 3 months in our underground natural cellars built in reinforced concrete. This happens at 900 meters altitude. 
Alpeggio is a blue cheese with a creamy and yellow paste, with rich veining. The aroma combines all the milky and herbal characteristics of raw milk cheeses with the slightly spicy hints of marbling.
