Classic aged robiola

Pizzino, the smallest and oldest village in Valtaleggio, overlooks the entire valley from its perch on the rocky summit. Locals still today recognize it as the historical point where the bergamini used to set off for high mountain pastures with their herds.
As small as its namesake village, this robiola is made with meticulous care to capture all the expertise and flavors of traditional aging. It has a very thin, rosy rind and a deep straw yellow and extremely creamy paste. On tasting it, the palate is struck by its astonishing mildness. Even when eaten with the rind on, as suggested, the flavor is never salty, characterized rather by unparalleled softness and delicacy.
